A single-origin co-ferment from El Vergel Estate in Colombia, made by Forest Coffee. Cherries are sourced across Tolima, Huila and Caldas depending on the season, then processed at the estate. Hand-sorted for ripe cherry only, pre-fermented 24 hours in cherry, depulped, then co-fermented anaerobically for five days with the mucilage and yeastβ€”building a honey process with a heavy, juicy fruit character. Dried mechanically for 10 days, then stabilised for five in GrainPro.
